Can you share your recipe for Mexican Pizza, that you use the beans for.
They look great.

Hi Kathey!

I'm happy to share the Mexican Pizza with you. It's not really cooking, it's more like assemble-ing ;-) I got the original idea from my Meatless Gourmet Easy Lowfat Favorites cookbook, but we've embellished it a bit.

On large ungreased baking sheet, place flour tortillas (two 10" will fit on ours), no overlapping. Spread a thin layer of warmed refried beans on tortilla and top with anything you want/can imagine. Some of our choices are black beans, taco meat, salsa, taco sauce, green onions, cilantro, sliced olives, shredded cheese, etc. Obviously, we don't use all of this all the time, just whatever is available and what suites each person.
Bake the "Pizzas" in a 400F oven for 6-8 minutes, until the cheese is melted and the edges of the tortilla are crisp. (we bake ours on the longer side so that the whole tortilla is pretty crisp and can hold up under all the goodies we've loaded it with.) Cut into wedges and enjoy! You may top with a dollop of sour cream or guacamole, if you like.

We each make our own in turn and while two are baking, two others are being prepared.

Hello and Happy Sunday!!

I made a big crock pot of Pinto Beans last night. The aroma this morning was enough to wake me up with hunger pains. lol

Anyway, I am trying your refired beans today and I'll let you know what the "troops" think. Hey, the best part is that lunch for tomorrow is halfway done...Mexican Pizza. woohoo

I'm "sick Mom" here and so our menu plan has fallen off a bit, but I did make our breakfast this morning and it was really good!

So, now that you're meals are planned and you have everything under control, what are you planning on doing with all your extra time? LOL!!! ;-)

The refried beans were a HIT! They all loved it, even baby J, who doesn't seem to like hardly anything. I must say that when I first read the recipe about using butter in beans, I thought it was odd. Lard-yes, oil-yes, butter-never heard of. However, as I fed Juan (he was bed ridden for an injury) the beans, he said, "oh these are good". :)

So, we had the Mexi-pizzas for dinner, only bc our original dinner was going to be leftover Pupusas, but those got eaten for lunch. Just a little change up in my planning, but still all good. They loved the pizzas too! Yeah, a new easy recipe. There is enough for breakfast tomorrow... Fried plantain & refried beans w/sour cream. yuuum

Have I mentioned how much I am enjoying planning?? :D
